My Fish Taco | Guacamole | Black Bean Corn Salsa | Rubio’s Sauce Recipes

I hope you all are having great days! I knew it was going to be a good one when Taco Tuesday and Cinco de Mayo fell on the same day…so what better time than to share a few family favorite recipes with you all!
I constantly get messages on Instagram asking about these recipes, so I thought I would share them all in one easy place!
For those of you who don’t know me personally, I originally am from San Diego AND my grandfather had tons of avocado trees. I can honestly eat an avocado by itself in one sitting and Mexican cuisines are a favorite.
Luckily for me, my daughter follows in my footsteps and is known at every Mexican restaurant we attend for her expert skills at licking a bowl of guacamole clean…so…ya…we love tacos…and not just any tacos…FISH TACOS.
In fact, if you are a California native you probably know Rubio’s. Well boy do I have a treat for you because I have PERFECTED my Rubio’s Secret White Sauce over the years due to my far proximity from any and all Rubio’s.
So…four recipes…one blog post…LET’S GET COOKING.
Fish Tacos Recipe:
You can use any white fish to make these but my personal favorite is tilapia. I use one half of a tilapia fillet for each fish taco. I typically serve them with chopped cabbage, corn tortillas and all the other recipes I am about to share.
Guacamole Recipe:
I love this green stuff. The key here is not to add too much salt and to make sure you are using ripe avocados!
Black Bean Corn Salsa:
This recipe is SO EASY and a crowd-pleaser! I make this for parties all the time!
Rubio’s White Sauce:
Every time I make this I feel like I am back in SoCal! It pairs so perfectly with the fish! I always finish off my fish taco toppings with a spoonful of this sauce!
Toppings Order:
- Start with a plain tortilla add a little bit of cabbage
- Place one half of a tilapia fillet on top
- Add black bean corn salsa, then guac, then white sauce
- Squeeze a little lime juice on top and enjoy!
